Star Lounge Coffee Bar, on the near West Side of Chicago, roasts their beans upstairs and then bring them downstairs to brew a cup of coffee that is never more than a few days old. Molly and Brian got a tour of the kitchen roasting facilities from owner Jesse Diaz.

One thing that makes Star Lounge unique is their technique in roasting their house Dark Matter beans. From the single origins to the blends they create, everything is done in a fluid bed Sivetz roaster, that sucks away the smoke as the coffee is cooking.
